Since summer is right around the corner but it isn't too unbearably hot yet, I've been using the BBQ as much as possible. Grillin meat and veggies, cool cool, but I've really been digging the potatoes.
Cut up several yellow potatoes into bite size pieces and throw in a big bowl
Slather them in olive oil
Dust them with garlic powder, salt and pepper, and apply the shakes and scoops and tosses
Throw in a sprig of rosemary (or sprinkle some from a bottle if you don't have a bush slowly taking over your front yard like I/my poor next door neighbors do)
Pour it out onto a sheet of tin/aluminum foil and roll it up like a burrito. If you like them more on the dry/crunchy side, poke some holes in the foil.
Apply to the top rack of the BBQ, or off to the side so they aren't in direct heat.
I usually throw them on when I start and take them off last. Figure they need at least 20 minutes.
Sometimes I change up the seasonings and do more of a curry/turmeric blend. Other times it's more of a dill/onions. Honey and mustard are also a good combo.
